We’re only a few days into August, and while July was national ice cream month, I just can’t help but squeak out a little more from everyone’s favorite summer treat. I’m in the middle of planning a little summer ice cream party for friends, and as a result, have been sitting on a whole bunch of recipes (involving ice cream) that I couldn’t wait until the party to share.

So, I’ve teamed up with Nestlé to bring you 3 (very) easy recipes, that all include a little ice cream, as a part of their ‘There’s an ice cream for that’ campaign! I’ve been taste-testing everything ahead of time and these are oh-so-ready to share. Click through for my recipes for homemade matcha waffles cones, mint chocolate chip donut sundaes, and (my favorite) a peaches and cream soda float – which can be served boozy or non-alcoholic.

Okay, so let’s start with the waffle cones. To add a pop of color and an unexpected flavor to ice cream, I made these matcha waffle cones. The subtle matcha flavor is just enough and the pretty green cone color is an added bonus. Plus, you can make these ahead of time, so you always have them ready for weekend get-togethers or just a night in at home.

Here’s what you’ll need to make your own matcha waffle cones (servings 8-10 cones)…

How to Make Matcha Waffle Cones

  • 1 cup all-purpose flour, sifted
  • 1 packed teaspoon matcha powder
  • 3/4 cup sugar
  • 1/3 cup cream
  • 2 eggs
  • 4 tbsp butter, melted and cooled
  • 1 tsp vanilla
  • 1/4 tsp salt
  • cooking spray

Recipe: Start by pre-heating your waffle cone maker (I found mine online and it came with a waffle cone roller). Then, whisk the butter, sugar, and salt until the mixture is light and fluffy.

Next, add and whisk together the cream, eggs and vanilla. Now add the flour – combining with the whisk again, but without over-mixing. Then, add the matcha powder.

Next, coat the waffle cone iron with cooking spray and spoon the batter into the middle of the iron. When the waffle is done, remove immediately and shape while warm with a cone roller. To shape the cone, wrap the waffle around the cone roller, and hold the waffle in place until it hardens or cools enough to keep its shape.

Top with Häagen-Dazs Caramel Cone or Häagen-Dazs Non-Dairy Chocolate Salted Fudge Truffle and you’re good to go. If you’re on the fence about which flavor to try, my fave option for this one is the Caramel Cone. The caramel swirls and chocolate cone pieces pair really well with the matcha.

Skip the bananas (and the cone for that matter) and make donut sundaes that rival the fun of banana splits from when you were a kid. They’re a little bit decadent, a little bit playful, and a whole lot of delicious. Plus, it’s easy to assemble with ingredients you probably already have in your home. So you can give it a try after a long day at work or a mid-day snack with friends.

Mint Chocolate Chip Donut Sundaes

Recipe: Plate your donut, then add a heaping scoop of Edy’s Slow Churned Mint Chocolate Chip on top. Who doesn’t get a little joy out of busting out the mint chocolate chip ice cream? Especially when combined with donuts.

Break a pirouline rolled wafer in half and stick both into the donut, add whipped cream and it’s ready to serve. If desired, you can also top these donut sundaes off with a sprig of mint and a little hot fudge.

When I was a kid, I loved soda floats – like really LOVED them. And even now as an adult, I’ve made an elevated version of that childhood classic. I came up with these peaches and cream soda floats that are made with a fresh peach puree, Häagen-Dazs Vanilla ice cream, and just a couple other ingredients.

They’re perfect for parties because they look fancy and are cute for photos, but are in reality insanely easy to make. And of course, delicious. The end result tastes like a fresh peachy cream soda. Yum!

Here’s what you’ll need to make your own peaches and cream soda floats (servings 1 soda float)…

Peaches and Cream Soda Floats

  • 1 (slightly overly recipe) peach
  • 2 scoops of Häagen-Dazs Vanilla
  • 3 ounces of vanilla bean soda
  • 3 ounces of peach soda
  • edible flowers and 1 sage leaf
  • (optional) splash of vanilla vodka

Recipe: Start by peeling the skin from one peach. Then slice and add to a food processor or blender to puree. Once pureed, place in a sifter and push through with the back of a spoon for a smooth puree.

Next, add the puree to the bottom of a glass (hold back a small spoonful or two to top the float at the end). Then add two scoops of Häagen-Dazs Vanilla ice cream. I specifically love the Häagen-Dazs Vanilla for this recipe because it’s made with just five simple ingredients, but is still super creamy and rich. Perfect for an ice cream float.

Pour 3 ounces of vanilla bean soda and 3 ounces of peach soda over the ice cream (both sodas come in glass bottles and are available at candy shops, specialty stores, and some regular grocery stores as well). Top with remaining peach puree, a sage leaf, and edible flowers.

Make it boozy! To make an alcoholic version of this soda float, add a splash of vanilla vodka before serving (2-3 ounces).
