Dutch Stroopwafel Ice Cream Sandwiches

At some point this weekend, I got a little bored and ended up making some waffle ice cream sandwiches to pass the time. As one does.

Well, okay. They’re not actually waffles… They’re Dutch stroopwafels (which is a waffle made from two thin layers of dough with caramel or honey syrup in between). So basically, they’re better than waffles.

Anyway, it sounds super fancy, but it’s really basic… All you need are some scoops of ice cream (any flavor – though I like mint chocolate chip, strawberry, and birthday cake for this one) and a stack of stroopwafels (there’s a good recipe here or you can buy them already made here and here). Then just scoop the ice cream onto a waffle and add another one on top. Done!

Store the extra sandwiches in the freezer and you’ll have a tasty treat anytime you need a pick-me-up.
