Stroopwafels are made of thin wafer layers, with caramel filling in between. They're also commonly referred to as syrup waffles.

All you need to make your own stroopwafel ice cream sandwiches is your favorite ice cream and a stack of stroopwafels.
There's a good recipe here or you can buy them already made here and here.
Then just scoop the ice cream onto a warm stroopwafel and add another one on top. Done!
You can store extra ice cream sandwiches in the freezer and you'll have a tasty treat anytime you need a pick-me-up.
But also the syrup filling won't be warm if you do it that way. So, I like to make them fresh - one at a time.
Pop the stroopwafels in the microwave first for 5-10 seconds and then add ice cream. It's delicious! I promise.
