Easy Peanut Butter Protein Balls

Meet your new favorite go to snack - organic peanut butter protein balls. They're delicious, packed with protein, and oh-so-easy. Plus, you can keep 'em in the fridge for up to a week and are great for a quick breakfast on the go, snacking and even dessert! In addition to making these guys for your own indulgences, you can also make them for meetings (believe me, your coworkers and clients will thank you at that 3pm meeting where everyone is dragging. Think: HUGE kudos!) , birthday parties (much better for you than cake and brownies!), cookouts, tailgating, camping trips, road trips, baby showers, lunch boxes (adults and children) and more!

Ingredients

  • 1 cup dry organic oatmeal
  • ½ cup of organic peanut butter
  • ½ cup of organic ground flax seed
  • ½ cup of organic chocolate chips
  • cup organic honey
  • 1 tbsp organic chia seeds
  • 1 tsp. organic vanilla extract

Instructions

  • Grab a medium sized bowl, combine all ingredients together (there really is no special marching order here) and then mix all the ingredients together.
  • Once all the ingredients are well mixed (they should be sticking together), place the bowl in the fridge and refrigerate for about 20 - 30 minutes.
  • Refrigerating the mixture will make it easier for you to roll the balls - the ingredients will not stick to your hands.
  • Once chilled, roll the balls in between your palms to make about 1" balls (you can experiment here, the size is completely up to you!).
  • Depending on the size you roll, this recipe will yield about 20 - 25 balls.
