Sugar Cookie Ice Cream Sandwiches

When I was a kid, sugar cookies were my FAVE. Whenever we’d go to the grocery store, I’d be sure to convince my mom to stroll through the bakery section, so I could get one of those free mini sugar cookies that they give out to kids to bribe them into good behavior. 

So, the fact that today is national sugar cookie day, makes me a very happy camper. It was basically a must to whip up a little somethin’ somethin’. AND because you know I love my ice cream sandwiches, I thought I’d make some sugar cookie ice cream sandwiches to celebrate.

Ready for your sugar rush? Here’s what you’ll need to make your own…

Sugar Cookies


– sugar cookie dough (homemade or store bought)
– colorful sprinkles (mine are from Williams Sonoma)
– ice cream (any flavor, but I have some suggestions below)


Pour sprinkles into shallow bowl. Roll the cookie dough into 1 inch balls, then roll each cookie ball in the sprinkles until its completely covered.

Place on a baking sheet and bake at 350 for 9-12 minutes (or according to packaging). Let the cookies cool, then remove from baking sheet.

Flip one cookie over, so the bottom is facing up and scoop one large scoop of ice cream on top. Place another sugar cookie on top and it’s ready to eat. Yum! So good.

– salted caramel ice cream (yum, yum, yum!)

– coffee ice cream recipe

– if you’re feeling crazy… cotton candy ice cream

I never knew there was a national sugar cookie day. I am happy to hear that because now i can have an excuse to eat cookies. I will give this recipe a try. Looks delicious. 🙂

I love this! Would definitely pair it with cotton candy ice cream, maybe throw in some real candy floss too. Heck let’s go overboard and serve it with chocolate sauce.
