Sooooo, with today being National Eclair Day and all, I thought adding another dessert sandwich recipe to the list was definitely necessary. You can never have too many ice cream sandwich options, right?
All you’ll need are a few eclairs and your favorite ice cream. I used store bought eclairs and cut them in half, like a hot dog bun. Add a few scoops of ice cream to the bottom half of the eclair. Then put the top of eclair back on and they’re ready to go. Simple as that!
