I never realized how easy it was to make nice cream (a healthy ice cream alternative) until Cori made some at the studio for everyone to try. Have you ever made it?!

It’s limited ingredient, healthier than the real stuff, and SO easy to make. AND it actually tastes good too. You didn’t think that the girl that has shared countless ice cream recipes here would settle for anything less than delicious did you?

We made a batch of pumpkin chai nice cream to share and it’s basically like eating fall in a cone (a cone-acopia). Grab this fall nice cream recipe after the jump.

Pumpkin Chai Nice Cream Ingredients

(makes 4-6 servings)

  • 3-4 ripe bananas
  • 1/3 cup chai concentrate
  • 1/2 teaspoon of vanilla
  • pumpkin pie spice to taste (Trader Joe’s has a good one)

Pumpkin Chai Nice Cream Recipe

Start by peeling the bananas and cutting each one into 2-3 pieces. This will help when blending later. Then, place them all in an airtight plastic baggie and freeze overnight (or until frozen).

When the bananas are frozen, remove from the freezer and place in a blender, along with the other ingredients (chai concentrate and pumpkin pie spice). Blend until you have a texture similar to soft serve ice cream.

Remove from blender and pour into a medium size bowl or something similar. Freeze overnight or until frozen.

Once frozen, scoop into cones or a bowl and enjoy. For a little crunch, top with toasted pumpkin seeds and cocoa nibs.
