Now that it’s officially summer, I thought I would give some popsicle recipes a go.
This first attempt was more of an experiment to see how little effort I could put in to make something that actually tastes good, than anything else. But I ended up really liking them, so I thought I would share.
And in case you’re wondering, it turns out, 3 ingredients is all it takes to make a good popsicle. *I could have paired this down to two ingredients, but let’s be real…I wanted to get that pretty stripe in there. So three ingredients it is!
Here’s how to make your own berry + mango cream popsicles…
Ingredients:
berry juice smoothie (the ones that are 100% fruit are the best) // coconut milk // mango juice smoothie (again, the 100% fruit ones) *You can also add vanilla or honey to the coconut milk to taste if you want.
Materials:
popsicle mold // wooden popsicle sticks
How To:
1. Pour berry juice into the bottom of each popsicle mold and put the mold into the freezer for 30-40 minutes.
2. Once the berry layer has started to set up, add popsicle sticks and pour in coconut milk. Place the mold back into the fridge until frozen (or at least semi-frozen).
3. Next, pour the last layer (mango juice) and put back in the freezer until completely frozen.
4. To remove the popsicles from the mold, run the bottom under warm water (or in a bowl of warm water) for 10-15 seconds and they should pop right out.
