You can top them just like toast with whatever you like (avocado, salmon, eggs over easy, etc), but they’re a bit more filling than your average toast.

These savory hash brown nests also make a unique brunch recipe and can easily be served ‘bar style’, so guests can add their own toppings! Here are 3 yummy hash brown nest ideas that will make you wonder why you never tried this breakfast before.

Ingredients for Hash Brown Nests (makes 4 nests – 4 inches wide)

  • 1 bag (1 lb) frozen shredded hash browns
  • 1 egg
  • 2 tbs of flour
  • oil (for pan)

Recipe for Hash Brown Nests

Place thawed shredded hash browns in bowl and mix in the flour and egg until evenly distributed. Form individual patties.

Heat a tablespoon of oil in a skillet over medium-high heat. When oil is hot, place patty into pan like a pancake. Cook until nicely brown and flip, about 5 minutes each side.

Once finished, top with your favorite ‘toast’ toppings. Here are three of my fave combos right now to get you started…

1. Avocado Hash Brown Nests // Slice half an avocado onto a cooked hash brown nest. Add a tablespoon of salsa and a handful of chopped red onion. Top with fresh herbs, salt, and pepper if desired.

2. Salmon and Cream Cheese Hash Brown Nests // Spread 2-3 tablespoons of cream cheese onto a cooked hash brown nest. Top with 1-2 very thinly sliced pieces of smoked salmon or lox (available in the seafood section of specialty stores like Whole Foods) and 1/2 tablespoon of chives.

3. Tomato and Ricotta Hash Brown Nests // Smear a healthy dollop of ricotta onto a cooked hash brown nest. Add 2 slices of heirloom tomatoes. Sprinkle with salt, pepper, and cilantro to taste.
