Coming up with s’more recipes has to be one of my favorite things to do. I don’t know if it’s because they’re so uncomplicated / easy with the limited ingredients OR if it’s just that I really, really like toasted marshmallows.
But whatever the reason, National S’more Day is coming up fast (this coming Monday, actually), so I wanted to squeeze in a new s’more recipe before sharing a whole bunch of new ones on s’more day next week. Check out last years s’more ideas right here.
Riffing off of last year’s toasted marshmallow waffle sandwiches, I created a miniature s’more version that is even better.
All you need to make your own are some mini waffles (homemade or store-bought), marshmallows, chocolate chips or a chocolate bar, and magic shell. Yum!
FYI, I used store-bought Eggo minis for the waffle portion to keep things easy and rainbow sherbet Magic Shell (!!!). The chocolate chips are really a preference thing. It’s not necessary to the overall taste, but it does make them more s’more like. So you know, you’re good either way.
