These limited ingredient lemon tarts are perfect for spring and super easy to make. It doesn’t hurt that they’re also decorated with fresh fruit and edible flowers, does it?! Didn’t think so.

Limited Ingredient Lemon Tarts (makes three 4 inch tarts)
For the crust you’ll need…
- 1.5 cups graham cracker crumbs
- 7 tablespoons of butter
For the filling you’ll need…
- 4 oz lemon curd (or homemade limoncello mousse)
- 1/3 cup whipped topping
Recipe
To make the crust, melt the butter and combine with graham cracker crumbs (we used a food processor). It should create a wet sand consistency. Form into molds making sure that the surface is flat and consistent all the way around. Place in freezer for 1-2 hours in order to set the crust.
To make the filling, combine the lemon curd and whipped topping. The whipped topping creates a more firm filling. Fill the crusts to the top with filling and smooth out the tops using the back of a spoon.
Add fruit toppings and other garnish of your choice.

Hi Barbara. Local farmers markets usually have edible flowers. Also, some grocery stores have them. For example, Trader Joes almost always has chamomile in the flower section and they are edible. Hope that helps!

BARBARA CAUDANAHi Pam and Claire. Yep, whipped topping is more of an American ingredient. It’s different than whipped cream – whipped topping doesn’t melt like whipped cream, so it acts as a stabilizer.
