Breakfast of Champions: Pina Colada Yogurt Bowl for the Win

Coconut Yogurt with Homemade Pineapple Curd Equals Pina Colada Yogurt Bowl

I had a bunch of pineapple curd leftover from last week’s piña colada meringue sandwiches. So, I thought I would use some of what was left to make a little breakfast.

If I’m being honest, I wasn’t sure how it was going to turn out…it was more of an experiment really. BUT I’m happy to report that it was a success! The results? A super easy piña colada yogurt that I could probably eat every morning. It’s that good.

Want to make some?

Pina Colada Yogurt Bowl

– 1 cup of vanilla or coconut yogurt
– 1/4 cup of homemade pineapple curd (find the recipe here)
– handful of coconut chips
– handful of banana chips
– 2 or 3 strawberries (fresh or dehydrated)

Combine yogurt and homemade pineapple curd in a bowl. Sprinkle with a small handful of coconut chips, banana chips, and strawberries. Enjoy! Add granola for a more hearty meal.

Once you have the pineapple curd made, this breakfast only takes a minute or two to make. Which makes it a great breakfast in my eyes because it’s so fast but still healthy.

P.S. I found those mini letter cookies at Trader Joe’s a while back and they’re basically my favorite thing. Apparently, I like to play with my food.

AND on another (food related) note…today is national fry day! Be sure to celebrate with this lemon and herb french fry recipe.

What’s your favorite thing to make for breakfast?
