I had a bunch of pineapple curd leftover from last week’s piña colada meringue sandwiches. So, I thought I would use some of what was left to make a little breakfast.
If I’m being honest, I wasn’t sure how it was going to turn out…it was more of an experiment really. BUT I’m happy to report that it was a success! The results? A super easy piña colada yogurt that I could probably eat every morning. It’s that good.
Want to make some?
Ingredients:
– 1 cup of vanilla or coconut yogurt
– 1/4 cup of homemade pineapple curd (find the recipe here)
– handful of coconut chips
– handful of banana chips
– 2 or 3 strawberries (fresh or dehydrated)
 Steps:
Combine yogurt and homemade pineapple curd in a bowl. Sprinkle with a small handful of coconut chips, banana chips, and strawberries. Enjoy! Add granola for a more hearty meal.
Once you have the pineapple curd made, this breakfast only takes a minute or two to make. Which makes it a great breakfast in my eyes because it’s so fast but still healthy.

P.S. I found those mini letter cookies at Trader Joe’s a while back and they’re basically my favorite thing. Apparently, I like to play with my food.
