They’re so good! Thin and crispy, with a soft caramel / honey syrup filling. Usually served with coffee or tea.
And it got me thinking…these would be perfect with ice cream.
So why not make some stroopwafel ice cream sandwiches? I mean, I’ve tried everything else when it comes to ice cream sandwiches: ice cream sandwich cookies, American waffles, s’mores, donuts, even tried ice cream sandwich eclairs once.
What is a stroopwafel?
Stroopwafels are made of thin wafer layers, with caramel filling in between. They’re also commonly referred to as syrup waffles.
They taste best warm, so if you’re not buying them fresh from a bakery or making them at home, pop them in the microwave for 5-10 seconds.
OR eat it the traditional way and put one overtop a mug of hot coffee or tea. The steam from the drink will warm and soften the caramel filling. Its so good!
Now imagine the warmth of that caramel filling and the crispy wafer mixed with ice cream!
Then you have a stroopwafel ice cream sandwich.
Where did stroopwafels originate?
It’s Dutch.
In the early 19th century, stroopwafels were invented by a baker in the Netherlands (Gouda specifically).
It was created as a way to use up leftovers from the bakery and eventually became a popular treat.
Where can you buy stroopwafels?
There are bakeries around the world that make fresh stroopwafels.
But if you want something that’s more accessible, there are many stores that sell prepackage versions: Trader Joe’s, Target, World Market, Amazon, and more. Daelmans and Rip Van Wafels seem to be the most popular / widely available.
Weird stroopwafel fact?
I recently discovered that athletes, specifically runners and cyclists, eat stroopwafels while they’re biking or running for a burst of energy and nutrition.
They’re made with easily digestible sugars, which means they’re great for endurance exercise. Who knew?
Stroopwafel Ice Cream Sandwich
So now that you know everything there is to know about stroopwafels. How do you make these sandwiches?
All you need to make your own stroopwafel ice cream sandwiches is your favorite ice cream and a stack of stroopwafels.
There’s a good recipe here or you can buy them already made here and here.
Then just scoop the ice cream onto a warm stroopwafel and add another one on top. Done!
You can store extra ice cream sandwiches in the freezer and you’ll have a tasty treat anytime you need a pick-me-up. But also the syrup filling won’t be warm if you do it that way.
So, I like to make them fresh – one at a time. Pop the stroopwafels in the microwave first for 5-10 seconds and then add ice cream. It’s delicious! I promise.
What kind of ice cream should I use?
You can use any flavor of ice cream ice cream, though I especially like the classics… vanilla, chocolate, or strawberry.

Made a few extras and stored in freezer. Cookies were VERY crunchy when I went to serve them. How can I hange the recipe yet have some on hand in freezer.

Hi Annelise. It’s just like any other ice cream sandwich. They can be a little messy, but the ice cream doesn’t typically fall out unless it’s super melty already. The stroopwafels are very thin and crispy, so it’s better than say a cookie ice cream sandwich in terms of how hard it is. Hope that helps.
