I Don’t Think You’re Ready for This Jelly: A Peanut Butter and Jelly Pancakes Recipe

Over the years, I’ve made peanut butter and jelly waffles, pb + j milkshakes, peanut butter and jelly donut sandwiches and even pb + j ice cream sandwiches. But there’s one more thing I haven’t tackled yet…pancakes! SO, today’s the day.

It’s peanut butter and jelly time, breakfast style, with peanut butter pancakes and strawberry ‘jelly’ syrup. Grab some OJ and a crossword puzzle (or your phone, who am I kidding?!), let’s do this!

Peanut butter pancakes with strawberry 'jelly' syrup

Here’s what you’ll need to make your own peanut butter and jelly pancakes…

Peanut butter pancakes ingredients

  • 1 + ½ cup of whole milk
  • 1 egg
  • 1/4 cup peanut butter
  • 1 + 1/2 cup flour
  • 2 tablespoons of light brown sugar
  • 1 teaspoon baking powder
  • pinch of salt
  • unsalted butter

Strawberry syrup ingredients

  • 2 + ½ cup strawberries
  • 1/4 cup honey
  • 1 + 1/2 tablespoons of light brown sugar
  • 2 tablespoons of cornstarch
  • 2 tablespoons of water
  • pinch of salt

Peanut butter and jelly pancakes

Instructions

Lets start with the syrup! Slice the strawberries and place into a medium sized pan. Followed by the honey, the brown sugar, salt. Place the saucepan on low heat, stir, and let simmer.

While that is going in a small bowl place the cornstarch and water, and stir until the cornstarch has dissolved. Then, pour the cornstarch mixture into the saucepan and stir. Let the mixture simmer for about 20 minutes until the mixture has thickened. Then, remove from the pan and set aside. Refrigerate.

Whisk milk, egg, and peanut butter together in a small bowl and set aside.

Next whisk the flour, light brown sugar, baking powder, and salt together in a separate medium sized bowl. Once the dry mixture is combined add the wet mixture and whisk until smooth.
Next, over medium heat, heat about 1 tablespoon of butter in a small pan. Using a ¼ cup scoop the pancake batter onto the pan and move in a circular motion. Let set until you see bubbles forming on the top layer, that’s when you know it’s time to flip the pancake. Continue until the batter is gone.

Makes about 1o regular sized pancakes.

I never heard of that sandwich combo before, but it sounds really intriguing. And oh yes…I almost forgot about french toast! One of my faves.

I actually eat peanut butter and syrup sandwiches (vs. peanut butter and jelly), so this mash-up sounds interesting. Over the past few years, I’ve increasingly become more of a waffle or French toast girl, though.
